Vanilla Chai Crumble Muffins Muffins: 2 tablespoons of melted butter 1⁄8 cup of avocado oil 1⁄4 cup of granulated sugar 1⁄6 cup of light brown sugar 1 large egg 1⁄2 tablespoon of vanilla extract 1 teaspoon of baking powder 1⁄4 teaspoon of baking soda 1 teaspoon of cinnamon 1⁄2 teaspoon of ground ginger 1⁄2 teaspoon of ground cardamom 1⁄4 teaspoon of allspice 1 teaspoon of salt 1 and 1⁄3 cup of flour 1 cup of International Delight Vanilla Chai Tea Latte Walnut Streusel Topping: 4 tablespoons of melted butter 1⁄2 cup of brown sugar 1 tablespoons of granulated sugar 1⁄4 cup of finely chopped pecans 2 tablespoon of flour 1 teaspoon of cinnamon In a small mixing bowl, I started with the crumble topping by melting the butter, then mixing the rest of the crumble ingredients together. I set this aside and started the muffin batter. In large mixing bowl, I added all my ingredients in and mixed until everything was well combined. Then in a cupcake pan, I lined 8 cupcake molds with a cupcake liner. Then I used my 3 ounce cookie scoop to scoop 6 ounce portions into each cupcake tin. Then I scooped a tablespoon of the crumble topping on top of each muffin batter. This recipe yielded 8 muffins. I baked this at 400 degrees fahrenheit for about 15 minutes, until the tops were golden brown. I took them out and let them cool for 30 minutes.
