This is a classic French “entrée” and do not say it is boring, bouchées à la reine (Bites the Queen’s way - or “Vol au vent”) is the most delicious and refinned savoury pastry there is! I make mine with prawns and scallops with a zing of lemon.
For 4 :
1 ready made puff pastry
1 egg
1 carrot diced very small
15g of salted butter
150g of small scallops
100g of mini prawns
For the bechamel
40g of salted butter
2 tbsp of flour
Add the juice from the seafood
4 tbsp of milk
Zest of half a lemon
Salt and pepper
