FLUFFY PROTEIN & FIBER RICH BLUEBERRY PANCAKES, NO PROTEIN POWDER, NO BANANA
These pancakes are soooo good and tick all the boxes: easy to make, very healthy, good for your digestive system and happen to be gluten free too. They’re also perfect if you are on a weight loss journey or as a post-work out meal because every serving packs 43 g protein. In other words good for everyone
Nutritional value: 14.6 g dietary fiber, 43.2 g protein, 50 g fruit
Prep: < 5 min Cook time: 6 min Yields: 4 pancakes (1 p)

Ingredients:
·200 g cottage cheese
·75 g oat flour
·1 tbsp chia seeds
·1 tsp baking powder
·1 egg
·1 tbsp vanilla extract
·pinch of salt
·50 g blueberries
 
Method:
-Mix cottage cheese, chia seeds, egg, salt and vanilla with a hand blender/in a blender until smooth. Now add the baking powder and flour and blend until combined
-Heat a bit of neutral oil in a large nonstick pan over medium heat until hot. Spoon about ¼ cup/3-4 tbsp batter per pancake into the pan, sprinkle the blueberries on top, cover, push it a bit down and cook until the edges are set and the bottom golden brown, about 3 min, gently flip them and cook for another 3 min until pancakes are cooks through and both sides are golden brown
-Serve as is, or with some fresh blueberries or jam, maple syrup and/or icing sugar
